A Caribbean-style dessert where sweet, succulent mango wedges are baked with muscovado sugar, butter and a splash of rum.

Ingredients

Quantity Ingredient
3 large, sweet mangoes
50g butter, plus a bit more for greasing
4-6 tablespoons dark rum
4-5 tablespoons muscovado or caster sugar
vanilla ice cream, to serve
2 passionfruits, (optional)

Method

  1. Preheat the oven to 250°C. Peel and cut the mangoes lengthwise into wedges, as close to the stone as possible. Place the wedges in a greased ovenproof dish, add a few knobs of butter here and there, pour over the rum and, last of all, sprinkle the sugar on top. Bake for roughly 10 minutes, or until the mango pieces are nice and golden.
  2. Serve the mango wedges slightly cooled or even lukewarm, with vanilla ice cream and some scooped-out passionfruit on top, if desired.
