These juicy minced meat patties are typically Swedish in flavour and a genuine example of traditional home cooking.

Ingredients

Quantity Ingredient
500g minced beef
1 teaspoon salt
1/4 teaspoon ground white pepper
100ml water
2 egg yolks
3 tablespoons onion, finely chopped
3 tablespoons pickled gherkins, finely chopped
2 tablespoons capers, chopped
5 tablespoons pickled beetroots, finely chopped
butter, for frying
freshly grated horseradish, to serve
snipped chives, to serve

Method

  1. First combine the mince with the salt and pepper, then add the water, egg yolks and all the chopped ingredients. Immediately shape the mixture into small round patties.
  2. Heat a frying pan, add a generous knob of butter and fry the patties in batches over medium heat. Turn them once, frying for a few minutes on each side, or until just cooked through.
  3. Serve the patties straight away, with the cooking juices from the pan poured over. Top with grated horseradish and some snipped chives. Lovely with pan-fried or boiled potatoes and steamed snow peas.
