Smørrebrød is a Danish open-faced sandwich, prepared here with cold slices of roast beef, curry-flavoured remoulade sauce, fried onion and grated horseradish.

Method

  1. Lightly butter a thin slice of Danish rye bread and cover with a couple of small lettuce leaves. Place a few thin slices of cold roast beef on top (folding the slices so that they fit nicely on the bread). Garnish with a dollop of curry remoulade sauce (see below), some fried onion flakes (store-bought), pickled gherkins and half a radish, then top with some freshly grated horseradish.
  2. To make the curry remoulade sauce, combine 150 ml whole egg mayonnaise, 1 teaspoon Dijon mustard and 1 tablespoon each of finely chopped gherkins, capers and sweet pickled onions. Season with about 1 teaspoon curry powder and a few drops of lemon juice. Serve with a glass of cold beer.
