Our favourite basil sauce

Ingredients

Quantity Ingredient
1 litre water mixed with 1 teaspoon salt
200g baby english spinach
a good handful fresh basil leaves
200g whole egg mayonnaise
200g see method for ingredients
sea salt and freshly ground black pepper

Method

  1. Bring the water and salt to the boil in a large saucepan. Add the spinach and boil for just 1 minute, no longer. Tip the spinach into a colander and rinse with cold water. Squeeze the spinach dry and then mix with the basil and mayonnaise using a hand-held blender or food processor. Stir in the crème fraîche and season with salt and pepper. This sauce is really good with potato wedges, salmon, warm or cold roast lamb and spring vegetables.
