Our friends’ carrot soup with a hint of orange

A warming soup for cold winter days. Our friends often serve it with a dollop of yoghurt or crème fraîche, and freshly baked bread.

Ingredients

Quantity Ingredient
2 medium onions
4-6 large carrots
3 cm piece fresh ginger
200ml fresh orange juice
2 tablespoons butter or olive oil
1/2 teaspoon salt, or to taste
700ml vegetable stock
200g see method for ingredients
or 200g thick yoghurt
salt
freshly ground black pepper

Method

  1. Peel and chop the onions, peel and coarsely grate the carrots, and peel and finely grate the ginger. Wash one of the oranges, finely grate the peel and cover to keep from drying. Squeeze both oranges, then set everything aside.
  2. Gently heat the butter or olive oil in a pot or large saucepan. Sweat the onion over low heat until soft, and season with salt. Add the ginger and carrots and sauté for a couple of minutes. Pour in the stock and orange juice, bring to the boil and then simmer for 10-15 minutes.
  3. Take a hand-held blender and mix everything right in the pot. Season with salt and freshly ground black pepper. Serve the soup topped with a dollop of crème fraîche or thick yoghurt. Sprinkle with the grated orange zest.
