Large white beans, fresh citrus, lots of chopped dill and a little mint…

Ingredients

Quantity Ingredient
600g cooked white beans, (about 250 g dried beans)
or 800g tinned large white beans
3 shallots, finely chopped
1 organic lemon, finely zested and juiced
2 teaspoons honey
pinch sea salt
freshly ground black pepper
3 tablespoons mild olive oil
large handful fresh dill, chopped
small handful fresh mint leaves, chopped

Method

  1. Cook the white beans in a pan of boiling water until soft, or rinse the tinned beans well and let them drain. Put the beans in a bowl and add the chopped shallots.
  2. Combine the lemon juice with the honey, salt, pepper and olive oil. Pour the dressing over the beans and gently fold in the dill, mint and lemon zest. Let the flavours develop for 30 minutes or so before serving.
