This is our version of the sweet and tart lemon pudding, which we serve with cream and sometimes garnished with a little caramelised lemon peel on top.

Ingredients

Quantity Ingredient
2 tablespoons butter, for the dish
2 organic lemons
50g butter
3 medium eggs
200g sugar
4 tablespoons plain flour
100ml full-fat milk
pouring cream, to serve

Method

  1. Preheat the oven to 180°C. Grease 1 large or 6 individual ovenproof dishes with soft butter. Finely grate the peel of 1 lemon and juice 2 lemons. Melt the butter.
  2. Separate the eggs into two bowls. Whisk the egg whites lightly, add 2 tablespoons of the sugar and continue whisking until the egg whites are stiff and shiny. Set aside.
  3. Whisk the egg yolks with the rest of the sugar until fluffy. Add the lemon zest, flour, milk, melted butter and, lastly, the lemon juice to the egg yolk mixture.
  4. Fold in about half of the egg whites and then carefully add the rest. Pour the batter into the dish or dishes.
  5. Bake for 15 minutes if using small dishes, and 30-35 minutes for one large dish. The pudding should turn lightly golden when cooked. Allow to cool slightly and serve with the cream.
