Everyday pasta with tuna

Piping-hot pasta with tuna, chilli, garlic, anchovies and parsley – delightful to eat and easy to make.

Ingredients

Quantity Ingredient
350g pasta of your choice
200g tinned tuna in oil
1 large garlic clove
50g tinned anchovies, plus oil
1 fresh red chilli
1 large bunch fresh flat-leaf parsley
1 tablespoon olive oil
freshly grated parmesan cheese, (optional)
salt
freshly ground black pepper

Method

  1. Boil the pasta in plenty of salted water. In the meantime, lightly mash the tuna (discard the excess oil) in a small bowl.
  2. Peel and finely chop the garlic, and chop the anchovies. Split the chilli in half lengthwise, carefully remove the seeds and finely chop the chilli. Chop the parsley and set aside.
  3. Heat a frying pan over low heat, then add the olive oil and gently sauté the anchovies, garlic and chilli for 2-3 minutes. Put in the mashed tuna and some of the oil from the anchovies. Season sparingly with salt and cook until thoroughly warm. Combine with the parsley and the freshly boiled, drained pasta.
  4. Serve immediately with (or without) grated parmesan cheese and black pepper.
