Ingredients

Quantity Ingredient
75g butter
300ml full-fat milk
425g plain flour
2 sachets dry yeast
2 tablespoons coarsely ground cardamom
1/2 teaspoon salt
90g caster sugar

Filling and topping

Quantity Ingredient
100g soft butter
4 tablespoons caster sugar
1 teaspoon pure vanilla extract
1 egg, lightly beaten
2-3 tablespoons caster sugar, for dusting
1 teaspoon ground cardamom, for dusting

Method

  1. For the dough, melt the butter in a saucepan, add the milk and gently heat until lukewarm.
  2. Sift the flour into a large bowl. Stir in the yeast, cardamom, salt and sugar. Gradually pour in the milk and combine to a rather soft dough. Work the dough with a wooden spoon until smooth and elastic. Cover and let rise for about 1 hour.
  3. Preheat the oven to 200°C. Line a baking tray with non-stick baking paper. Sprinkle a bit of flour on the work surface and turn out the dough. Gently knead the dough until smooth. Add a bit more flour if needed.
  4. Roll out the dough into a large rectangle, and spread a mix of butter, sugar and vanilla on top. Roll it up like a Swiss roll, joining the two ends to form a ring, and place it on the tray, seam-side down. Use kitchen scissors to cut small notches on the top of the ring. Set aside to rise for 30 minutes. Brush with the beaten egg and sprinkle with the combined sugar and cardamom. Bake in the middle of the oven for 25-30 minutes. Let cool under a tea towel.
