Spicy dried fruit compote with Earl Grey tea and more

In this succulent, sweet-tasting compote, the dried fruit is simmered in a syrup based on Earl Grey tea, flavoured with cardamom and vanilla. It’s great with a dollop of lightly whipped cream.

Ingredients

Quantity Ingredient
700ml freshly brewed earl grey tea
3-4 tablespoons caster sugar
10 green cardamom pods
1/2 vanilla pod
12 dried soft figs
12 dried soft apricots
12 soft prunes
cream, lightly whipped, to serve

Method

  1. Measure out the freshly brewed tea, sugar and cardamom pods in a saucepan. Split the half vanilla pod lengthwise and add it as well. Cover and cook until the liquid is syrupy, about 5 minutes.
  2. Meanwhile, remove the small hard stems on each fig. Put the dried fruits into the syrup and continue cooking, covered and over low heat, until the fruit plumps up and softens. It takes about 10-12 minutes. Take the lid off the pan and allow the compote to cool. Serve with lightly whipped cream.
