Nice and crunchy, easy-to-bake biscuits with almonds and cardamom. We like them with lots of cardamom, but choose the smaller amount if you prefer milder tasting biscuits.

Ingredients

Quantity Ingredient
50g almonds
100g butter, at room temperature
90g caster sugar
2 tablespoons golden syrup
150g plain flour
1/2 teaspoon bicarbonate of soda
1/2-1 tablespoon coarsely ground cardamom

Method

  1. Preheat the oven to 175°C. Lightly grease or line a baking tray with non-stick baking paper.
  2. Roughly chop the almonds and set aside. Cream the butter with the sugar and golden syrup until smooth. Combine the flour with the bicarbonate of soda, almonds and ground cardamom, and add it all to the creamed butter. Quickly work into a dough.
  3. Divide the dough into 2 pieces, then roll the pieces into lengths and transfer to the tray. Flatten the lengths quite a bit with your hand and groove them with a fork.
  4. Bake for about 15-20 minutes, or until golden brown. Allow the lengths to cool slightly, but not completely, before slicing them on the diagonal into 3-4 cm biscuits. Leave to cool on the tray.
