Tuna and avocado baguette

These baguettes are perfect for outdoor picnics. They are filled with tuna and avocado, which is such a great combination.

Ingredients

Method

  1. Mix one tin of tuna with about 100 ml whole egg mayonnaise. Season to taste with sea salt, some freshly ground black pepper and a few drops of good olive oil.
  2. Halve a baguette lengthwise and lightly butter both sides. Cover the bottom half of the baguette with sliced tomatoes and avocado. Spread the tuna mixture on top, then add thinly sliced red onion and perhaps a little extra black pepper. Top with small, crisp lettuce leaves. Put the top half of the bread in place and use a sharp knife to cut the baguette into suitably sized pieces. Wrap each filled baguette in greaseproof paper.
