Superb club sandwich with avocado and chicken

This is a classic double-decker sandwich (three layers), which has been enhanced by adding sliced avocado to the traditional chicken and bacon. You can use a bought barbecued chicken if you like, but the sandwich is even tastier if you cook the chicken yourself. The chicken can be prepared ahead of time, but the sandwich should be served freshly made.

Ingredients

1 tablespoon olive oil
1 tablespoon butter
1 chicken breast fillet
sea salt and freshly ground black pepper
1 small garlic clove, crushed, (optional)
4 rashers bacon
1 medium tomato
1 small avocado
6 slices white sandwich loaf or sourdough bread
6 tablespoons whole egg mayonnaise
lettuce leaves, rinsed, plus a few extra leaves, for garnish
4 wooden skewers

Method

  1. To cook the chicken, preheat the oven to 200°C. Heat a non-stick frying pan over medium heat, then add the oil and butter and brown the chicken for a few minutes on each side. Season with sea salt and black pepper. If using the garlic, sprinkle it over the top of the chicken, then transfer the chicken to a small ovenproof dish and bake in the oven for 13-14 minutes. Remove from the oven and set aside to cool.
  2. Slowly fry the bacon until crisp, then remove from the pan and place on paper towels to drain. Cut the cooked chicken into thin slices. Thinly slice the tomato. Halve the avocado and remove the stone, then slice the avocado and set aside.
  3. Toast all 6 bread slices. Cut 2 of them diagonally into triangles and set aside for later.
  4. Spread some mayonnaise on the remaining 4 bread slices. Take out 2 plates and place one bread slice (mayonnaise-side up) on each plate. Cover the bread with crisp lettuce leaves, then place the sliced chicken on top. Cover with a second bread slice (mayonnaise-side up), then add the lettuce leaves and bacon (2 strips on each sandwich), as well as a few slices of tomato and avocado.
  5. Put the 2 reserved bread triangles on top of each sandwich. If you like, you can spread mayonnaise on them as well; if so, place them mayonnaise-side down. Press the sandwiches together. Using the pre-cut bread triangles as a guide, cut the sandwiches in half diagonally.
  6. Secure the sandwiches with the wooden skewers, and serve at once, garnished with a few extra lettuce leaves on each plate.
