This is one of our favourite salads to serve with roast lamb or grilled or barbecued chicken, or as a small starter.

Method

  1. Cover a platter with nice, tender lettuce leaves (perhaps some rocket or little gem). Top with large cubes of avocado, crumbled soft goat’s cheese and toasted pine nuts.
  2. Season with a pinch of sea salt, and finish off with a few drops of red wine vinegar and a drizzle of mild olive oil.
