This is an all-purpose chutney, known as hara chutni. It is eaten with North Indian snacks, grilled tandoori dishes and even spread in sandwiches. Every home has their own recipe which might be as simple as herbs, seasoning and lemon juice. We often add dried mango powder but if you don’t have any, add more lemon juice. Pistachios help bind the chutney which might otherwise become watery, but they can be omitted.

Ingredients

Quantity Ingredient
40g fresh mint leaves
10g fresh coriander leaves
1/2 garlic clove, peeled
1/4 small onion, peeled and chopped
1-2 green chillies, chopped
12 raw pistachio nuts, shelled and chopped
1/4 teaspoon dried mango powder or dried pomegranate powder
1 tablespoon lemon juice, or to taste
salt, to taste
30ml water

Method

  1. Simply puree all the ingredients for the chutney together in a food processor until smooth. Add as little water as possible, taste and add more lemon juice if necessary – it should be herby and lemony. Store in clean screw-top jars in the fridge; it will keep for a few days.
