A great-tasting raita with the added bonus of having the combined cooling properties of mint, cucumber, yoghurt and cumin – a perfect way to counter heat in the food or in the air. Great with any meal or barbecue, or even just as a dip with naan, crudites or potato wedges.

Ingredients

Quantity Ingredient
12.5cm cucumber
3 tablespoons fresh mint, shredded
400ml plain yoghurt
salt and freshly ground black pepper, to taste
3/4 teaspoon roasted cumin powder
good pinch red chilli powder

Method

  1. Peel the cucumber, then coarsely grate and squeeze all the excess moisture from it.
  2. Mix together the cucumber, mint and yoghurt. Stir in the seasoning and cumin powder. Sprinkle over the red chilli powder to serve.
