On the streets of Goa you will find stir-fried chilli beef dishes. The beef is already cooked with spices and local flavourings, then stir-fried to order and served with local bread: pau. I think they are even better with chorizo, with all the smokiness and spiciness those sausages bring. You can’t get pau in the UK, but its softness is similar to that of burger buns – only with more structure and flavour. I also sometimes add some good-quality mayonnaise (mixed with some fresh chopped coriander and black pepper) for a bit of creaminess along with the rocket.

Ingredients

Quantity Ingredient
1 teaspoon vegetable oil
250g raw chorizo sausages, sliced
3-4 indian green finger chillies, stalks removed, pierced with a knife
1 medium-large tomato, finely sliced
3 hot dog buns, or other longish bread rolls, split lengthways
handful of rocket, (optional)

Method

  1. Add the oil to a frying pan, add the chorizo and onions and cook gently until the chorizo releases oil and the onions are starting to soften. Add the chillies and stir-fry for a few minutes, then throw in the tomato and a splash of water, increase the heat and cook until the tomatoes have softened and the whole thing comes together.
  2. Serve hot in the buns, with a little rocket, if you like.
