A quick and easy, fresh dish that is simply spiced, this goes well with most south Indian curries or even a simple piece of grilled fish. You can use any vegetables you like; this is just one possible combination.

Ingredients

Quantity Ingredient
3 tablespoons vegetable oil
1 teaspoon brown mustard seeds
20 fresh curry leaves
1 onion, finely chopped
2 fat garlic cloves, finely chopped
12 large asparagus stalks, woody bit snapped off, sliced diagonally into 1cm pieces
120g green beans, topped and tailed, sliced into two or three
150g broccoli or purple-sprouting broccoli, cut into small florets 1/ 3 tsp turmeric
salt, to taste
2-3 tablespoons unsweetened desiccated coconut, plus more to serve
1/3-1/2 teaspoon dried red chilli flakes, or to taste

Method

  1. Heat the oil in a non-stick frying pan. Add the mustard seeds and, once they are spluttering, add the curry leaves and onion; cook until the onion is soft. Add the garlic and gently sauté for one or two minutes, until it smells cooked.
  2. Add the vegetables, turmeric, salt, coconut and chilli and enough water to cover the base of the pan by 1–1.5cm. Cook over a moderate flame for three or four minutes, or until the vegetables are cooked to your liking (I like mine to have just a little bite). By now the water should have evaporated; if not increase the heat and quickly boil off the rest. The onions and coconut should cling to the vegetables.
  3. Sprinkle with a little extra coconut and serve.
