Apple, orange and mint raita

A lovely, refreshing raita that is perfect for those who like a hint of sweetness or fruitiness with their meal.

Ingredients

Quantity Ingredient
1 small orange, peeled
400g plain yogurt
1 small, crunchy apple, cut into 1cm dice, (peeled or skin on, you decide)
large sprinkling of shredded mint leaves
1 scant teaspoon roasted cumin powder
salt, to taste
sprinkling of chilli powder, (optional)

Method

  1. Using a small sharp knife, cut into the orange segments on either side of the membrane, so the segment falls out. Cut these in half and add to the yogurt.
  2. Add all the other ingredients and stir well to mix. Taste, adjust the seasoning and serve, or chill until required.
