Grilled endive, goat’s cheese and beetroot salad

This is a great salad to introduce some bitter flavours into kapha and pitta diets; bitter foods are very cleansing and detoxifying and should be eaten everyday. Beetroot is fantastic for the blood and great for vata and kapha, but can sometimes be a little heating for pitta so if you have a serious pitta imbalance, replace the beetroot with dried figs. This salad also works for vata, but for a serious vata imbalance, omit the endive and caramelize half a sliced red onion in 2 teaspoons of oil, then mix with the greens.

Ingredients

Quantity Ingredient
1 large endive or chicory, quartered lengthwise
4 sprigs fresh thyme
1 teaspoon vegetable oil
1 soft, flavoursome log of goat’s cheese
2-3 slices bread of your choice
2-3 generous handfuls red oak or other soft salad leaves
2 large beetroot, cooked, peeled and cut into wedges, (kapha and vata)
3 large dried figs, cut into wedges, (pitta)

Pitta dressing

Quantity Ingredient
3 teaspoons olive oil
1/2 teaspoon lemon juice
salt, to taste
good pinch sugar

Kapha dressing

Quantity Ingredient
2 teaspoons olive oil
1 teaspoon good-quality balsamic vinegar
salt, to taste

Vata dressing

Quantity Ingredient
4 teaspoons olive oil
1 1/2 teaspoons good-quality balsamic vinegar
salt, to taste

Method

  1. Preheat the grill to 220ºC or to its highest setting.
  2. Whisk together the dressing for your body type.
  3. Place the endives in a small baking dish, top each with a sprig of thyme and drizzle over the olive oil. Grill until lightly browned in spots, around 10 minutes in total, turning over halfway.
  4. Cut the goat’s cheese log into 6–8 slices 1 cm thick. From the bread, cut out the same number of circles the size of the log using a pastry cutter. Lightly grill the toast for 1 minute on each side.
  5. Place the goat’s cheese slices on top of the toasted bread. Place on the grill rack and grill until hot and browning in places, around 4 minutes.
  6. Make a bed of salad leaves on each plate. Top with the endives, beetroot or dried figs, and top with the grilled goat’s cheese croûtons. Drizzle with the dressing and serve hot.
