Freshwater fish is a good ayurvedic food choice as it is less heating than seawater fish. This is a really simple dish to cook and great for vata with simple ingredients and flavours which they should find easy to digest, nourishing and grounding. This dish is also good for pitta, although only to be eaten occasionally and pitta should omit the capers (which are quite sour) from the dressing. This dish is a little too rich for those with a kapha imbalance. Serve with steamed vegetables.

Ingredients

Quantity Ingredient
20g black olives, drained and finely chopped
1/3 teaspoon lemon zest
1 small garlic clove, peeled and made into a paste
1 tablespoon olive oil
2-3 slices white bread, crumbled
1 medium trout, butterflied
salt and freshly ground black pepper
2 sprigs fresh rosemary, lightly crushed

Lemon salsa verde

Quantity Ingredient
3 tablespoons olive oil
3 teaspoons lemon juice, or to taste
1 rounded tablespoon fresh parsley, chopped
3/4 tablespoon basil leaves, shredded
2 teaspoons capers, well washed, (vata only)
1 small garlic clove, peeled and made into a paste
3/4 tablespoon fresh mint, shredded

Method

  1. Preheat the oven to 180ºC.
  2. Mix together the olives, lemon zest, garlic paste and half the olive oil. Stir in the breadcrumbs. Season the fish inside and out, place the filling inside and fold the fish over so it is back in its original shape. Place on a baking tray, top with the rosemary and drizzle over the remaining oil. Bake on the middle shelf of the oven for 25–30 minutes or until the fish is cooked.
  3. Stir together the ingredients for the salsa verde. Season to taste and serve drizzled over the fish.
