Greek-style chicken with lemon, potatoes and garlic

This is an easy dish inspired by the Greek way of roasting chicken with lemon and garlic. It is light and filling and delicious as a summer or spring meal with salad for pitta or vegetables for vata. Don’t be scared off by the amount of garlic in the food – it will be very mellow by the time it is cooked. This dish is a little heavy for those with a kapha imbalance but they can make it with fewer potatoes, breast of chicken, a little less oil and more vegetables to lighten the meal.

Ingredients

Quantity Ingredient
500g new potatoes, boiled and halved lengthways
1 large red onion, peeled and cut into wedges
12 small asparagus spears, woody bits snapped off
6 fat garlic cloves, peeled and finely chopped
1/2 small lemon, cut into 3 wedges
2 tablespoons vegetable oil
lots freshly ground black pepper
1 teaspoon ground cinnamon
4 large chicken thighs, bone in and skinned
1 tablespoon fresh oregano
12 small black olives
150ml chicken stock
2 handfuls fresh parsley, chopped
salt

Method

  1. Preheat the oven to 180ºC.
  2. Toss together the vegetables, garlic, 2 wedges of the lemon, oil, a little seasoning (the stock and olives have more), cinnamon and chicken. Place in a baking dish and tuck in the oregano. Bake for 30 minutes, basting the chicken occasionally with any pan juices and tossing the vegetables around a little.
  3. Add the olives and stock, place back in the oven and cook until the chicken is cooked through, around 10 minutes more. Stir in the parsley (if using) and serve.
