This is a very easy dish that basically cooks itself. The flavours are simple and work really well with this much-overlooked vegetable. Please do add the cauliflower leaves as instructed; they become beautifully crispy and, in our family, we fight over who gets them!

Ingredients

Quantity Ingredient
1 teaspoon garam masala
1 teaspoon cumin seeds
1/2 teaspoon turmeric
1/2 teaspoon nigella seeds
15g root ginger, finely shredded, (peeled weight)
1/2 teaspoon salt
1 cauliflower, cut into florets, keeping the outer leaves
4 tablespoons olive oil

Method

  1. Preaheat the oven to 180°C.
  2. Mix all the spices and ginger together in a bowl with the salt and toss in the florets and the leaves. Place everything in a non-stick baking tray and drizzle over the oil. Toss again and place on the middle shelf of the oven.
  3. Roast for 20–25 minutes, or until done to your liking, then serve immediately.
