I do love peas. I love their yielding texture, sweetness and subtle flavour, plus I always have some in the freezer and as we all know they cook in minutes. But – and it is a big but – sometimes they can be a bit blah. I need more flavour… so this is what peas taste like when they venture out of their safe ‘vanilla’ zone! Use lemon juice if you don’t have mango powder.

Ingredients

Quantity Ingredient
2 tablespoons vegetable oil
1 rounded teaspoon cumin seeds
20g root ginger, finely shredded, (peeled weight)
2 teaspoons ground coriander
3/4 teaspoon garam masala
lots fresh ground black pepper
400g frozen peas, defrosted
2 teaspoons dried fenugreek leaves
120ml whole milk
1-1 1/2 teaspoons mango powder, or to taste
salt

Method

  1. Heat the oil in a saucepan. Add the cumin seeds and, when they darken, add the ginger and cook until it colours. Stir in the coriander, garam masala and some salt.
  2. Add the peas and fenugreek leaves and cook for a couple of minute so that any excess moisture dries up. Add the milk and cook over a moderate flame, stirring often, until the milk, too, has evaporated. Stir in the mango powder, taste and adjust the seasoning, adding lots of black pepper. Serve.
