I’ve never met anyone who doesn’t like these. You can serve big slices of it for lunch, with a green salad.

Ingredients

Quantity Ingredient
1 baguette
3/4 small red onion, finely chopped
1 small tomato, finely chopped
1/4-1/2 green chilli, finely chopped
2 tablespoons coriander leaves, chopped
pinch salt
120g cheddar, grated

Method

  1. Preheat the oven to its highest setting.
  2. Slice the baguette to 1 cm thick. Place on the upper oven shelf to toast.
  3. Mix the onion, tomato, chilli, coriander leaves, salt and cheddar. Mound onto the toasts and cook until the cheese melts and there are a few speckled brown bits on top. Bits of the cheese will spill on to the baking tray. They are my favourite!
