My Indian vegetarian BLT! The paneer is grilled in a spicy marinade and lightly charred; the black cardamom adds a smoky dimension. The tangy mayonnaise mixture contains some Greek yogurt for freshness and tang. All in all, this is a warm, spicy, crunchy sandwich that is very moreish. Of course, it will be better if you make your own paneer but, if you use shop-bought paneer, steep it in boiling water for 15 minutes to soften before marinating and cooking.

For the marinade

140g greek yogurt
1 1/3 teaspoons root ginger, peeled and grated
1 teaspoon garlic, grated
1 1/3 teaspoons chilli powder
1 1/3 teaspoons ground cumin
1 1/3 teaspoons garam masala
1 1/3 teaspoons paprika
8 teaspoons lemon juice
4 tablespoons vegetable oil
salt, to taste
4 black cardamom pods, (optional)

For the sandwich

300g Paneer, cut into long 1 cm slices
8 slices wholemeal or other bread, thin or medium sliced
8 teaspoons mayonnaise
2 tablespoons greek yogurt
4 teaspoons lemon juice
4 teaspoons whole milk, plus more if needed
2 small vine tomatoes, finely sliced
crisp lettuce leaves
red onion, finely sliced and separated into rings

Method

  1. Stir together the yogurt, ginger, garlic, ground spices, lemon juice and oil and season to taste. Grate in the cardamom (I use a fine microplane, but a nutmeg grater will work).
  2. Place the paneer in the marinade and leave for at least 20 minutes. Put a piece of foil on a grill tray and turn the grill to high. Arrange the paneer slices on the rack and grill for 10 minutes, turning once, or until the edges are charring.
  3. Meanwhile, toast the bread. Stir together the mayo, yogurt, lemon juice and milk and season lightly.
  4. Spread the mayo over one piece of toast, place over an even layer of tomato slices, then lettuce. Top with the paneer, add the onion slices, then the last toast. Serve immediately.
