Kathi rolls are one of India’s indigenous ‘sandwiches’, in which a filling is encased in bread and designed to be eaten on the go. I was first introduced to the concept in Mumbai, when local friends would stop to buy one from a street vendor who came to the car window. They were always hot, fresh and absolutely delicious. I haven’t had one for years and don’t know if the ‘Frankie seller’ still operates, but the memory lives on. I have used a tortilla wrap here, instead of flatbread. You can use any vegetable that is not too watery and retains its texture and flavour.
