A lovely accompaniment to any barbecue, this is creamy and sweet, with both heat and a lovely nuttiness.

Method

  1. Heat 1 teaspoon of vegetable oil in a small saucepan, allowing it to pool on one side. Add ½ teaspoon each of mustard and cumin seeds and, once the spluttering dies down, add to 300 g of cooked, cubed beetroot in a large bowl.
  2. Add a pinch of chilli powder, 2½ tablespoons of toasted sesame seeds, 2 tablespoons of shredded mint leaves, 250 g of Greek yogurt, a large pinch of caster sugar, and salt to taste. Mix together, adjust the seasoning, and serve.
