This takes less than 10 minutes to make, and you can use almost any greens: try shaved asparagus or small broccoli florets. You can buy frozen grated coconut in Asian stores, and it’s very useful to have in the freezer.

Method

  1. Heat 2 tablespoons of vegetable oil in a large, non-stick frying pan. Add 1 teaspoon of mustard seeds and, once they pop, reduce the heat and add 8 curry leaves.
  2. Once the popping dies down again, add ½ onion, finely chopped, and cook until soft. Add 2 teaspoons of finely chopped root ginger and 300 g of green beans, trimmed and cut into 1 cm lengths. Season to taste, add a splash of water and cook over a medium-low flame for around five minutes. Stir in 3 tablespoons of grated coconut and 1 teaspoon of lemon juice, taste, adjust the seasoning and serve.
