Rice is one of the simplest and quickest grains to cook, and good rice is addictive, yet so many people are afraid of cooking it properly. But the technique to cook great fluffy rice is actually really easy. This is how we have always made it in my family; it is foolproof. You can go on to use this simple method to create lovely pilafs.

Ingredients

70-80g good-quality white basmati rice, for each person

Method

  1. Wash the rice really well in several changes of water until the water runs clear. Place in a saucepan and cover with at least 7.5 cm of water. Bring to the boil, then reduce the heat to halfway between a simmer and a boil and cook, uncovered, for seven to eight minutes. Try a grain, it should be tender; if not cook for another minute and check again.
  2. Drain, then return the rice to the pan and the heat to dry off any moisture for one or two minutes. Turn off the heat, cover tightly and steam for eight to 10 minutes. Uncover, fluff with a fork and serve.
