When visiting India as a teenager, I became obsessed with cold coffee and ice cream. South Indian coffee is delicious and once you added milk, ice cream and sugar, it was divine… I suppose it was the original iced frappuccino. I have added cinnamon and cardamom and it is quite wonderful. Like a cherry on top, I like to finish it with a sprinkling of cocoa. I don’t have a coffee machine, so I use instant. If you can make fresh coffee at home, use 400 ml of strong coffee instead, it will be even better.

Ingredients

Quantity Ingredient
5 teaspoons instant coffee, or to taste
7 teaspoons caster sugar, or to taste
a few pinches ground cardamom
1 teaspoon ground cinnamon, or to taste
600ml semi-skimmed milk
8 ice cubes
4 small scoops good-quality vanilla ice cream
ground cinnamon, to serve
or cocoa powder, to serve

Method

  1. Stir the coffee into 400 ml of boiling water with the sugar and spices. Once well mixed, add the milk. Leave to cool, then chill.
  2. Once cold, pour into glasses with the ice cubes and scoop the ice cream carefully on top. Sprinkle with a little cocoa or cinnamon. Serve immediately, with a straw and a spoon.
