Iced lemon, ginger and mint tea

A lovely, refreshing drink for a summer’s day in the garden. Once cold, taste and see if you’d like more ginger. Feel free to use your favourite tea bags. Try the drink, without the tea, for children.

Ingredients

Quantity Ingredient
2 tea bags
500ml water, boiling
7-8 ginger slices, skin on
80-90g caster sugar
3 tablespoons lemon juice
ice
3-4 mint sprigs
lemon slices
500ml water, cold

Method

  1. Place the tea bags in the boiling water and leave to steep for three minutes.
  2. Meanwhile, lightly bruise the ginger slices so they release their lovely juices. Squeeze out the water from the tea bags and keep them aside (in case you want the tea stronger at the end).
  3. Add the caster sugar to the tea and stir to dissolve. Add the lemon juice and pour the whole thing into a jug in which there is a good handful of ice, the cold water, the ginger and the leaves from the mint. Stir, then chill.
  4. Before serving, add lemon slices, taste and adjust the sugar (you will need to dissolve any extra sugar in hot water first), lemon and mint to taste.
