I had never eaten this before making my own, but I think it is one of the best things you can do with a beetroot!

Method

  1. Coarsely grate 2 large, raw beetroots (wear gloves to keep from staining your hands). Place in a large non-stick saucepan with 1 litre of milk and cook, stirring occasionally, until the milk has dried off; it will take more than an hour.
  2. Add 3 tablespoons of caster sugar and 4 tablespoons of unsalted butter and cook, stirring, for another 15–20 minutes to help the beetroot caramelise. It will turn a lovely, deep colour. Meanwhile, gently heat 1 teaspoon of unsalted butter and fry 3 tablespoons of raisins with a pinch of ground cardamom and a small fistful of cashew nuts until the nuts are lightly golden. Stir into the halva. Taste, adjust the sugar and serve hot.
