I am a tea drinker and sweet-spiced Indian chai, with a hint of heat from ginger and pepper, is the ultimate revive-relax drink; it is a wondrous thing. I normally make mine with root ginger and whole spices, but this way is so much quicker and easier that it soon weaves its way into your morning.

Ingredients

Masala spice mix

Quantity Ingredient
1 1/2 tablespoons green cardamom pods
2 teaspoons fennel seeds
1 rounded teaspoon ground ginger
1/2 teaspoon black peppercorns
6 cloves
6cm cinnamon stick

For the tea

Quantity Ingredient
250ml water
3 tablespoons milk
1/2 teaspoon tea leaves

Method

  1. Grind together the masala spices in a spice or coffee grinder until you have a fine powder. Store the extra in a jar, away from sunlight.
  2. To make tea for one, pour the water and milk into a small saucepan. Add the tea leaves and 1⁄2 teaspoon of the ground masala spice mix.
  3. Bring to the boil and simmer until the colour of the tea is to your liking. Pour through a small sieve into your cup.
  4. Sweeten to taste with sugar and add a little more chai powder if you like.
