Ingredients

Quantity Ingredient
4 tablespoons extra virgin olive oil
1 large red onion, peeled and chopped
2 garlic cloves, peeled and thinly sliced
2-3 fresh bay leaves
1 teaspoon dried oregano
1 teaspoon dried mint
500g courgettes, roughly chopped
1 large tomato, roughly chopped
1 tablespoon concentrated tomato puree
sea salt
freshly ground black pepper

Method

  1. Heat the olive oil in a large saucepan over medium heat and sauté the onion, garlic, bay leaves, oregano and mint for 8–10 minutes. Add the courgettes and continue to cook, stirring well, for 5 minutes. Season generously with sea salt and freshly ground black pepper.
  2. Add the tomato and tomato purée and enough water to just cover the mixture. Simmer for 45–60 minutes until the courgettes are tender and the sauce has thickened. Serve either hot or cold.
