The wild thyme (kekik) used for this is actually fresh za’atar (thymbra spicata) found all over Turkey, Syria and Lebanon.

Ingredients

Quantity Ingredient
200g pickled wild thyme, from a jar
1 small red onion, peeled and thinly sliced
small bunch fresh flat-leaf parsley, roughly chopped
1 small red chilli, deseeded and finely chopped
3 tablespoons extra virgin olive oil
1 tablespoon red wine vinegar
sea salt
freshly ground black pepper

Method

  1. Combine all the ingredients in a bowl, season generously with sea salt and freshly ground black pepper and mix well before serving.
