Cucumber, pistachio and yoghurt salad

This easy-to-make salad combines some favourite Turkish ingredients. Try to use small, Middle Eastern-style cucumbers if you can find them, and if you’re in Istanbul, head for the sleepy village of Çengelköy, famed for its cucumbers.

Ingredients

Quantity Ingredient
6 small cucumbers
3 tablespoons shelled unsalted pistachios, roughly chopped
3 tablespoons fresh mint leaves
3 tablespoons pomegranate molasses
100g thick yoghurt
2 tablespoons extra virgin olive oil
sea salt
freshly ground black pepper

Method

  1. Peel the cucumbers and remove any seeds. Cut the flesh into 7–8-cm strips and place them in a bowl. Add the pistachios and mint and season generously with sea salt and freshly ground black pepper.
  2. Combine the pomegranate molasses, yoghurt and olive oil in a bowl. Add to the salad and mix well. Serve immediately.
