Ingredients

Quantity Ingredient
12 sardines
100ml extra-virgin olive oil
1 lemon, juiced and zested
garlic
1 ripe tomato
1/2 teaspoon aniseed or fennel seeds
sea salt
freshly ground black pepper

Method

  1. Place 12 sardines, cleaned and filleted, in a bowl, then add 100ml extra-virgin olive oil, the juice and zest of 1 lemon, and 1 garlic clove, thinly sliced. Cover with cling film and marinate in the refrigerator for at least 30 minutes.
  2. Meanwhile, grate 1 ripe tomato into a bowl using a coarse grater. Discard the tomato skin.
  3. Remove the marinated sardines from the refrigerator and transfer to a serving platter. Sprinkle over 1/2 teaspoon aniseed or fennel seeds and season generously with sea salt and freshly ground black pepper. Add the grated tomato, combine well with the sardines and serve.
