Ingredients

Quantity Ingredient
300g long green peppers
1 tablespoon flat-leaf parsley, finely sliced
garlic, chopped
1/2 lemon, juiced
sea salt

Method

  1. Heat a barbecue grill or cast iron griddle pan to medium. Grill 300g long green peppers, turning occasionally, until tender, for about 8–10 minutes. Transfer the peppers to a wooden board, remove skins and deseed before chopping. Place in a mortar and pound with a pestle for a few minutes, but don’t purée them. Add 1 tablespoon finely sliced flat-leaf parsley, 2 chopped garlic cloves, and the juice of 1/2 lemon. Season with sea salt and mix well before serving.
