Ingredients

500g plain flour
pinch salt
4 tablespoons melted unsalted butter
2 tablespoons orange flower water
2 egg yolks, beaten
cold water
vegetable oil

Almond paste filling

450g blanched almonds
300g caster sugar
150g unsalted butter, melted
4 tablespoons orange flower water
1 teaspoon almond essence
1/2 teaspoon ground mastic

To serve

icing sugar, to dust

Method

  1. To make the filling, place the almonds and sugar in a food processor and blend until ground. Add the butter, orange flower water, almond essence and mastic and blend again until combined. Transfer the filling to a board and carefully roll into 36 small balls in the palm of your hands, then let stand for 30 minutes.
  2. Meanwhile, make the pastry by placing the flour and salt in a large bowl. Make a well in the middle and slowly add the butter, orange flower water, egg yolks and 100ml cold water and mix until well combined. Turn out onto a lightly floured board and knead the dough for about 10 minutes until is smooth and elastic.
  3. Preheat the oven to 180ºC and lightly oil two baking trays. Carefully roll each ball of almond paste filling in the palm of your hands into a cigar shape about 4cm long. Divide the pastry dough into 36 balls. Roll each pastry ball out on a lightly floured surface to a 12–14cm circle and place a piece of filling on one half of the pastry. Fold the other half of pastry over the filling, pressing the pastry edges down with fingertips to seal, and carefully bend the pastry into a crescent shape.
  4. Trim any excess pastry with a fluted pastry cutter and place each crescent on a baking tray. Prick each pastry 2–3 times to allow steam to escape while baking.
  5. Bake in the oven for 20–25 minutes or until a light golden colour. Allow to cool on a wire rack before serving, dusting with icing sugar if desired.
