Ingredients

Quantity Ingredient
sea salt
310g fresh peas
1 tablespoon grapeseed oil
60ml Xo sauce
2 bunches mustard leaf, trimmed
1/2 lemon

Method

  1. Bring a large saucepan of water to the boil. Season with a good pinch of sea salt and blanch the peas for 1 minute. Taste the peas and, if they are tender, drain them — otherwise cook for another minute or two.
  2. Heat the grapeseed oil in a large frying pan over medium–high heat. Add the XO sauce and fry for 1 minute before adding the peas. Cook for 2 minutes then add the mustard leaf, cooking until the leaves have wilted. Season with a squeeze of lemon juice and sea salt to taste.
