Arma Ebi prawns can be found at some fishmongers. If unavailable, small Crystal Bay prawns can be used.

Ingredients

Quantity Ingredient
1 1/2 tablespoons sugar
60ml white soy sauce
200ml shaoxing rice wine
3cm piece fresh ginger, sliced
1 french shallot, peeled and cut into rings
300g arma ebi prawns or other small prawns

Method

  1. Bring the sugar, soy sauce, shaoxing rice wine, ginger, shallot and 150 ml water to a simmer in a saucepan over medium heat. Continue to simmer gently for 5 minutes. Transfer to a container and leave in the refrigerator to cool.
  2. Bring a large saucepan of salted water to a simmer over medium heat. Plunge the prawns into the water and cook for 30 seconds. Remove from the heat and cool in plenty of iced water for no more than a minute. Strain and quickly pat the prawns dry before adding them to the cool wine marinade. Leave to marinate for 30 minutes before serving. Serve with a discard bowl for the shells and a finger bowl for sticky fingers.
