My absolute favourite thing to eat, full stop. Pipis and XO sauce is the late-night dish of choice for chefs everywhere. It’s packed full of rich flavours and is an interactive, social way to eat. A pot of pipis is a celebration. The addition of fried bread adds a great texture and is also useful for mopping up the sauce. Fried bread is available at most Asian grocery stores.

Ingredients

Quantity Ingredient
3 sticks fried bread
2kg pipis or small clams
60ml Xo sauce
2 teaspoons lemon juice

Method

  1. Preheat the oven to 180°C.
  2. Bake the fried bread for 3 minutes until crisp. Slice each piece of bread into 1 cm thick pieces and set aside.
  3. Put the pipis and a splash of water In a large saucepan or wok over high heat. Cover the saucepan with a lid. Check the pipis after 1 minute, stirring them vigorously before replacing the lid. Repeat until most of the pipis have opened. Drain the pipis and reserve the cooking liquid.
  4. In a separate saucepan, fry the XO sauce over medium–high heat until aromatic. Add the opened clams and 60 ml of the reserved cooking liquid to the pan, stirring vigorously over the heat for 1 minute. Add the lemon juice and adjust the seasoning if needed.
  5. Finally, mix the fried bread through the pipis. Continue to stir until coated. Transfer to a serving bowl and serve immediately.
