Ingredients

Quantity Ingredient
2cm piece fresh ginger, thinly sliced
60ml grapeseed oil
1 tablespoon rice wine vinegar
3 teaspoons white miso paste
1/2 ripe nashi, peeled, cored and chopped
1/4 teaspoon salt
pinch ground white pepper

Method

  1. In a small saucepan over medium–low heat, fry the ginger in the grapeseed oil until the ginger is golden. Strain the oil and set aside to cool. Discard the ginger.
  2. Put the vinegar, miso, nashi, salt and pepper in an upright blender and process until smooth. With the blender running, slowly pour in the cooled ginger oil to emulsify the dressing. Check the seasoning and correct if needed. Store in an airtight container for up to 3 days.
