Boiled rice is the backbone of Vietnamese cuisine, and the most common way of enjoying rice as part of a Vietnamese meal.

Ingredients

600g long-grain white rice

Method

  1. Put the rice in a large colander or sieve and rinse under cold running water. Place your hand in the centre of the rice and move it in a circular motion to make sure the water runs freely over all the rice. When the water runs clear, allow the rice to drain.
  2. Transfer the rice to an electric rice cooker and cover with water. The water should come up to the first knuckle when the tip of your index finger is resting on top of the rice. Cook according to the rice cooker's instructions.
  3. Alternatively, place the rice and 1.125 litres water in a saucepan and bring to the boil. Cover immediately and reduce the heat. Simmer for 20 minutes, then allow the rice to rest for a further 10 minutes before serving
