Clay pot pork with quail eggs and daikon

This is a Vietnamese classic: a typical worker’s lunch at com binh dan eateries, and a regular at family meals. If using your clay pot for the first time, soak it in cold water overnight so it won’t crack in the oven.

Ingredients

Quantity Ingredient
1 x 800g pork belly
6 quail eggs
1 tablespoon sugar
vegetable oil, for deep-frying
60ml fish sauce
100ml coconut milk
1/4 daikon, peeled and diced

Marinade

Quantity Ingredient
40ml fish sauce
2 garlic cloves, chopped
2 red asian shallots, chopped
1/3 teaspoon freshly ground black pepper

Method

  1. Slice the pork belly into 2 cm strips and place in a shallow tray. Combine the marinade ingredients and spread over the pork belly, tossing to coat. Set aside to infuse for 20 minutes.
  2. Meanwhile, bring a saucepan of water to the boil. Gently lower the eggs into the water and boil for 5 minutes. Remove with a slotted spoon and plunge into cold water to stop the cooking process. Cool, then peel and set aside.
  3. Place the sugar and 11/2 tablespoons water in a heavy-based saucepan over medium heat and stir until the sugar has dissolved. Bring to the boil and cook for about 5 minutes, until the sugar is a rich golden colour.
  4. Standing away from the pan, pour in 250 ml water. When the spluttering has stopped, stir until you have a smooth caramel sauce.
  5. Preheat the oven to 160°C and place a clay pot in the oven to heat up.
  6. Heat 1 tablespoon of oil in a wok and stir-fry the pork over medium heat until browned all over.
  7. Add the caramel sauce, fish sauce, coconut milk, daikon and enough water to cover the pork. Transfer to the heated clay pot, then cover and bake in the oven for 40 minutes.
  8. Meanwhile, deep-fry the quail eggs in about 4 cm of oil until lightly golden.
  9. Add the eggs to the clay pot and bake, uncovered, for a final 15 minutes.
