Peanut, garlic and shallot dipping sauce

Ingredients

Quantity Ingredient
100ml lime juice
1 teaspoon rice vinegar
110g sugar
60ml fish sauce
1 long red chilli, chopped
50g peanuts
1 tablespoon vegetable oil
3 garlic cloves, finely chopped
2 red asian shallots, finely chopped
1 lemongrass stem, finely chopped, white part only

Method

  1. Combine the lime juice, vinegar and sugar in a small bowl and mix until the sugar has dissolved. Stir in the fish sauce and chilli and set aside.
  2. Pound the peanuts to a coarse texture in a mortar. Set aside.
  3. Heat the oil in a wok or frying pan over medium heat. Sad the garlic, shallot and lemongrass until fragrant. Add the peanuts and continue making for 1-2 minutes, keeping the wok moving to stop the peanuts burning.
  4. Stir the peanut mixture through the fish sauce mixture, then divide among six dipping bowls.
