Ingredients

Quantity Ingredient
200g sugar
200ml water or pork stock
100ml fish stock
100ml rice vinegar
100ml lime juice
1 long red chilli, seeded and chopped
3 garlic cloves, chopped
1/2 small carrot, thinly sliced
60g thinly sliced green papaya flesh

Method

  1. Combine the sugar and the water or stock in a saucepan and heat until the sugar has completely dissolved. Remove from the heat
  2. Stir in the remaining ingredients and divide among six dipping bowls.
