Crispy seafood rice pancake

These famous pancakes from Ho Chi Minh City are much larger and more filling than the Hue variety, banh khoai. Preparation is as simple as making an omelette, but you must make sure all your ingredients are prepared before you start cooking the pancakes, so you do not need to interrupt the process.

Batter

Ingredients

1 1/4 cups banh xeo flour
1/2 teaspoon caster sugar
1/3 teaspoon salt
1 egg, lightly whisked
2 1/2 tablespoons coconut milk
3 spring onions
vegetable oil, for frying

Filling

200g squid, cooked and sliced
250g cooked prawns, shelled and deveined, sliced in half lengthwise
200g rockling fillet, or other firm white fish fillet, diced and cooked
4 tablespoons fried shallots
200g bean sprouts
5 spring onions, sliced

Accompaniments

1 iceberg lettuce, separated into cups
1 large handful coriander leaves
1 large handful mint leaves
Classic dipping sauce

Method

  1. Sift the flour into a bowl. Make a well and add the sugar, salt, egg, coconut milk and 180 ml water. Mix to form a smooth batter then add the spring onions and combine.
  2. Heat the oil in a 20–25 cm frying pan over high heat. When hot, ladle ¹⁄³ cup batter into the centre of the pan. The oil should sizzle when the batter is added. Working very quickly, rotate the pan until the batter evenly covers the base. When bubbles start to form on the uncooked side, cover and cook for 1 minute.
  3. Remove the lid and top with a quarter of the squid, prawns, rockling, fried shallots, bean sprouts and spring onions. Continue cooking for about 2 minutes, or until the bottom of the pancake is golden and crispy. Remove from the pan and fold the pancake in half.
  4. Repeat this process until ingredients have all been used up.
  5. Eat the pancakes by tearing off pieces, putting them in the lettuce cups, adding the herbs, then dipping them into the sauce.
