Saffron and barberry pilaf

The rice vermicelli makes this pilaf that bit more interesting; feel free to also add nuts or dried mulberries.

Ingredients

Quantity Ingredient
1 teaspoon saffron threads
1 litre chicken or vegetable stock
60ml olive oil, plus extra for frying
1/2 onion, finely diced
1 garlic clove, crushed
1 teaspoon ginger, finely grated
1 teaspoon ground cinnamon
1 teaspoon ground cumin
1 teaspoon ground coriander
1 1/2 teaspoons sea salt
250g rice vermicelli noodles, broken into bite-sized pieces
400g basmati rice, soaked overnight in cold water
4 barberries
2 tablespoons flat-leaf (italian) parsley, chopped, to garnish

Method

  1. Combine the saffron threads and stock in a saucepan. Bring to a simmer over medium heat, then remove and set aside.
  2. Heat the oil in a deep, heavy-based frying pan over medium heat and fry the onion, garlic and ginger for 5 minutes. Add the spices and salt and fry for 30 seconds, then add the rice noodles and fry until golden.
  3. Drain the rice and add to the frying pan. Pour in the stock and bring to the boil. Reduce the heat to low, cover with a lid and cook for 10–12 minutes, or until the liquid is absorbed. Remove from the heat, take off the lid and place a clean tea towel (dish towel) over the rice. Leave to steam for a further 10–12 minutes.
  4. Heat 1 tablespoon of oil in a small saucepan over medium heat. Fry the barberries for 30 seconds, then stir through the rice mixture with the parsley.
